- 2 tsp vegetable oil
- 500g chicken breast, cut into strips
- 1 parsnip, cut into thin strips
- 1 red capsicum, cut into thin strips
- 4 spinach leaves, shredded
- 3 spring onions, cut into strips
- 1 clove garlic, crushed
- 2 tsp grated fresh ginger
- 4 tbsp reduced-salt soy sauce
- 2 tsp cornflour blended with dry sherry
- 2 tbsp dry sherry
- 4 tbsp honey
- salt and pepper to taste
How to make Honey Chicken:
- Heat oil in a frying pan over a medium heat.
- Add garlic and ginger and stir-fry for 2 minutes.
- Then add chicken and cook for 2-4 minutes or unti chicken changes colour.
- Add parsnip, red capsicum, spinach and spring onions and stir-fry for 2-3 minutes.
- Combine soy sauce, salt, pepper, cornflour mixture and honey, stir into pan and cook for 1-2 minutes.
- Serve hot with boiled rice.
