Ingredients:
- 1 tsp vegetable oil
- 1 boneless chicken breast fillet, cut into strips
- 1/2 red bell pepper, thinly sliced
- 2 oz sliced broccoli
- 1 oz snow peas
- 1/2 stalk celery, sliced
- 1/2 cup mango puree
- 1/2 tsp cornflour blended with 2tsp water
- salt and pepper to taste
Method:
- Heat oil in a frying pan over a medium heat.
- Add chicken and stit fry for 3 minutes or until golden.
- Add red bell pepper , broccoli, snoe peas(magnetout), celery and mango puree and simmer.
- Add salt and pepper to taste.
- Stiring frequently for 8-10 minutes or until chicken and vegetables are tender.
- Stir cornflour mixture into pan and cook for 2 minutes.
- Then cool slightly and serve with rice.
- Enjoy Mango Chicken Stir fry.
