Ingredients:
- 2 cold cooked potatoes
- 2 boiled chicken breast
- 4 eggs
- salt to taste
- freshly ground black pepper
- 30g butter
- 3 tbsp grated cheddar cheese
How to make Cheesy Chicken Potato Frittata:
- Cut potato in small cubes and set aside.
- Cut Chicken breast into strips and set aside.
- Break eggs into bowl, add black pepper and salt to taste.
- Whisk eggs an d set aside.
- Place butter in frying pan.
- Heat over a medium heat until butter melts and sizzles.
- Add chicken strips in melted butter and cook for 2-3 minutes.
- Then add potatoes to pan and cook for 3-4 minutes or until potatoes are brown.
- Pour egg mixture into pan.
- Turn heat to low.
- Cook for 10 minutes or until frittata is almost set.
- Preheat grill to high.
- Sprinkle top of frittata with cheese.
- Place pan under grill.
- Cook for 2-3 minutes or until cheese melts.
- Cut frittata into wedges to serve.
