Ingredients:
- 2 potatoes, grated
- 1 carrot, grated
- 1 zucchini, grated
- 100g broccoli, finely chopped
- 1 cup cooked chicken
- 2 eggs, lightly beaten
- 1/2 cup cornflour
- 1/4 cup milk
- vegetable oil for frying
- salt and pepper to taste
How to make Chicken Fritters:
- Place potatoes, carrot, zucchini, broccoli and cooked chicken in a medium bowl and mix to combine.
- Add salt and pepper and mix well.
- Place eggs, cornflour and milk in a seprate bowl and whisk until smooth.
- Pour egg mixture into vegetable mixture and mix to combine.
- Heat oil in a frying pan over a medium heat.
- Drop 2 tablespoons of the mixture into pan, flatten slightly and cooked for 2 minutes each side or until cooked and golden.
- Drain on absordent kitchen paper and cool slightly befor serving.
