- 400g can apricots
- 2 tsp cornflour
- 2 tsp soy sauce
- 1 tsp grated fresh ginger
- 2 clove garlic, crushed
- 500g chicken breast fillets
- salt and pepper to taste
How to make Chicken with Apricot Sauce:
- Preheat oven to 180 degree.
- Drain the apricots, reserving 4 tbsp of the can juices.
- Make a puree of apricots with the juices in a blender.
- Add the cornflour, soy sauce, ginger, garlic, salt and pepper , mix until smooth.
- Place the chicken fillets in a baking dish, pour over the apricot mixture and bake for 40 minutes.
- Remove the chicken fillets , cut it into slices and arrange on a serving dish.
- Strain the sauce , pour it over the chicken slices and serve at once.
