Ingredients:

  • 500gm boneless chicken
  • 2tsp garlic, finely chooped
  • 2 medium onions,sliced
  • 1/2 cup boiled peas
  • 1 carrot, sliced
  • 1 red bell pepper,sliced
  • 2 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 1 tsp ground black pepper
  • 3 tbsp cornflour
  • 1 cup water
  • 1 cup oil for frying


How to make Black Pepper Chicken:

  • Cut chicken into small pieces(about1/4-inch) and set aside.
  • Add soy sauce,oyster sauce, vinegar,salt, white pepper,sugar and 2tbsp cornflour, in a medium bowl.
  • Add chicken pieces in sauce mixture and coat all sides, marinate chicken for 30 minutes.
  • After marination ,heat 1 cup oil in a large pan .
  • Fry chicken in hot oil about 3-4 minutes or until crispy and golden.
  • Remove chicken and drain.
  • Heat 2tsp olive oil in a pan, add chopped garlic and onions, stir fry 1-2 minutes.
  • Then add carrot,peas and red bell pepper, stir fry more 1-2 minutes.
  • Add salt, black pepper and fried chicken in it.
  • Stir to coat everything evenly.
  • In a small bowl, mix 1tbsp cornflour with 1 cup of water.
  • Put cornflour paste in pan and bring to boil.
  • Cook 1-2 minutes or until sauce thickens.
  • Seve with steamed rice.

Ingredients:


  • 500gm boneless chicken thighs

  • 4tbsp soy sauce

  • 1tbsp honey

  • 1/2 cup mirin

  • 4tbsp caster sugar

  • 4 garlic cloves, chopped

  • 2 green onions, cut into 1 inch length

  • 2 tbsp corn syrup

  • salt and pepper to taste

  • 10-12 bamboo sticks


How to make Chicken Yakitori:


  • Add soy sauce, mirin, sugar,garlic,honey,corn syrup in a small sauce pan, and cook over medium heat.
  • Add salt and pepper in the sauce.
  • Cook sauce 10_15 minutes or until sauce has reduced and thickened slightly.
  • Set aside the sauce and cool completely.
  • Soak the Bamboo sticks in cold water for 10-15 minutes.
  • Now prepare the chicken, cut chicken thighs into 1 inch pieces.
  • Thread chicken and green onions onto bamboo sticks and set aside.
  • Preheat the grill on medium heat until hot.
  • Brush bamboo sticks with sauce and start grilling.
  • When the chicken starts changing color, brush the sauce on both sides.
  • Grill the chicken yakitori over medium heat until chicken is completely cooked.
  • Serve chicken yakitori with rice.

Ingredients:

  • 2 potatoes, grated
  • 1 carrot, grated
  • 1 zucchini, grated
  • 100g broccoli, finely chopped
  • 1 cup cooked chicken
  • 2 eggs, lightly beaten
  • 1/2 cup cornflour
  • 1/4 cup milk
  • vegetable oil for frying
  • salt and pepper to taste

How to make Chicken Fritters:

  • Place potatoes, carrot, zucchini, broccoli and cooked chicken in a medium bowl and mix to combine.
  • Add salt and pepper and mix well.
  • Place eggs, cornflour and milk in a seprate bowl and whisk until smooth.
  • Pour egg mixture into vegetable mixture and mix to combine.
  • Heat oil in a frying pan over a medium heat.
  • Drop 2 tablespoons of the mixture into pan, flatten slightly and cooked for 2 minutes each side or until cooked and golden.
  • Drain on absordent kitchen paper and cool slightly befor serving.

Ingredients:



  • 2 tsp vegetable oil
  • 500g chicken breast, cut into strips
  • 1 parsnip, cut into thin strips
  • 1 red capsicum, cut into thin strips
  • 4 spinach leaves, shredded
  • 3 spring onions, cut into strips
  • 1 clove garlic, crushed
  • 2 tsp grated fresh ginger
  • 4 tbsp reduced-salt soy sauce
  • 2 tsp cornflour blended with dry sherry
  • 2 tbsp dry sherry
  • 4 tbsp honey
  • salt and pepper to taste


How to make Honey Chicken:



  • Heat oil in a frying pan over a medium heat.
  • Add garlic and ginger and stir-fry for 2 minutes.
  • Then add chicken and cook for 2-4 minutes or unti chicken changes colour.
  • Add parsnip, red capsicum, spinach and spring onions and stir-fry for 2-3 minutes.
  • Combine soy sauce, salt, pepper, cornflour mixture and honey, stir into pan and cook for 1-2 minutes.
  • Serve hot with boiled rice.

Ingredients:
  • 400g can apricots
  • 2 tsp cornflour
  • 2 tsp soy sauce
  • 1 tsp grated fresh ginger
  • 2 clove garlic, crushed
  • 500g chicken breast fillets
  • salt and pepper to taste
How to make Chicken with Apricot Sauce:

  • Preheat oven to 180 degree.
  • Drain the apricots, reserving 4 tbsp of the can juices.
  • Make a puree of apricots with the juices in a blender.
  • Add the cornflour, soy sauce, ginger, garlic, salt and pepper , mix until smooth.
  • Place the chicken fillets in a baking dish, pour over the apricot mixture and bake for 40 minutes.
  • Remove the chicken fillets , cut it into slices and arrange on a serving dish.
  • Strain the sauce , pour it over the chicken slices and serve at once.

Ingredients:

  • 10 chicken drumsticks
  • 150ml natural low fat yogurt
  • 2tsp lemon juice
  • 2 tbsp apricot chutney
  • 2 cup breadcrumbs
  • 1/2 tsp white pepper
  • 1 tbsp soya sauce
  • 1 tbsp chili garlic sauce
  • salt to taste
How to make Oven Fried Chicken:

  • Preheat oven to 18o degree.
  • Add yogurt, lemon juice, chutney, soya sauce, chili garlic sauce, salt and pepper in a blender.
  • Make a fine puree of all ingredients.
  • Then transfer this puree in a shallow bowl.
  • Spread out the breadcrumbs in a similar bowl.
  • Coat each drumsticks in puree ,then roll in breadcrumbs.
  • Arrange drumsticks on a baking sheet and bake for 45 minutes or until cooked through.
  • Serve hot.

Ingredients:

  • 1 long french loaf
  • 4 tbsp mayonnaise
  • 1 tbsp wholegrain mustard
  • 2 tbsp yoghurt
  • 6 lettuce leaves
  • 125g thinly sliced roast chicken or turkey
  • 60g thinly sliced salami
  • 2 tomatoes
  • 4 slices cheddar cheese

  • Cut french loaf in half lengthwise then set aside.

Ingredients:
  • 1 tsp vegetable oil
  • 1 boneless chicken breast fillet, cut into strips
  • 1/2 red bell pepper, thinly sliced
  • 2 oz sliced broccoli

  • 1/2 stalk celery, sliced
  • 1/2 cup mango puree
  • 1/2 tsp cornflour blended with 2tsp water

Ingredients:
  • 2 cold cooked potatoes
  • 2 boiled chicken breast
  • 4 eggs
  • salt to taste
  • freshly ground black pepper
  • 30g butter
  • 3 tbsp grated cheddar cheese
How to make Cheesy Chicken Potato Frittata:
  • Cut potato in small cubes and set aside.
  • Cut Chicken breast into strips and set aside.
  • Break eggs into bowl, add black pepper and salt to taste.

  • Heat over a medium heat until butter melts and sizzles.

  • Preheat grill to high.

Ingredients:

  • 2cup boiled chicken breast(chopped)
  • 2 cup mayonnaise
  • 1cup chopped cabbage
  • 1/2 chopped red bell pepper
  • 2 chopped green onion
  • 1 chopped apple
  • 1cup chopped celery
  • 6-8 sweet cranberries
  • 6-8 green olives, chopped (optional)
  • 1 apple , chopped
  • 2 tsp apple cider vinegar
  • 1 tsp soya sauce
  • 2 tsp olive oil
  • salt and pepper to taste
  • 10-12 walnuts for garnishing

Method:

  • In a large bowl mix together mayonnaise, salt, pepper,vinegar, soya sauce, olive oil for preparing the dressing of salad.
  • Then chopped finely cabbage, green onion, apple, celery, sweet cranberries, green olives, and red bell pepper.
  • Add all chopped ingredients and boiled chicken in the salad dressing.
  • Mix well.
  • Then chill for at least 1 hour.
  • Garnish chicken salad with walnuts and serve.

  • 1 kg chicken wings
  • 2 tbsp soy sauce
  • 1 tsp mustard paste
  • 1 tsp salt

Method:

  • Rinse chicken wings and pat dry.
  • Mix all ingredients together and set aside.
  • Marinate wings in mixture about 2 hours.
  • After 2 hours,preheat oven at 375 degree.
  • Then bake wings for about 45minutes.

Ingredients:

  • 75g butter
  • Grated zest
  • juice of 1 lemon
  • 2tbsp freshly chopped mint
  • 2tbsp freshly chopped parsley
  • 16 baby carrots
  • 12 asparagus, trimmed
  • 8 baby courgettes, halved
  • 16 small baby new potatoes, halved
  • 4 skinless, boneless chicken breasts
  • Salt to taste
  • Black pepper to taste

Method:

  • Preheat the oven to 200ºC.
  • Mix the spreadable butter, grated lemon zest and herbs in a small bowl.
  • Take 4 squares of foil, divide the vegetables between them then place a piece of chicken on top.
  • Spread over some of the butter mixture, season generously with salt and freshly ground black pepper, then sprinkle over the lemon juice.
  • Fold the edges of the foil together, sealing tightly.
  • Then place on a baking tray.
  • Cook for 25-30 minutess until the vegetables are tender and the chicken is cooked.
  • Serve hot.
